  • 2 cups cooked orzo pasta Cook until al dente
  • 1 pound grilled chicken breast, sliced Can use leftover grilled chicken
  • 1 avocado, diced Use ripe avocados for creaminess
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice Add more for tanginess
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the cooked orzo, grilled chicken, avocado, cherry tomatoes, cucumber, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.

Serving

Notes
