Ingredients
  

For the Chicken and Broccoli

  • 2 pieces boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup cooked grains (rice, quinoa, couscous, etc.)

For the Creamy Garlic Sauce

  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil For seasoning chicken and roasting broccoli
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • Optional Fresh parsley or chives for garnish

Preparation

  • Season chicken breasts with olive oil, salt, pepper, and optional spices. Grill over medium-high heat, flipping once, until cooked through and lightly charred (internal temp: 165°F).
  • Toss broccoli with olive oil, lemon juice, and a pinch of salt. Roast at 400°F for 15–20 minutes until crisp-tender.
  • Prepare grains according to package instructions. Fluff with a fork and keep warm.
  • In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in cream, season with salt and pepper, and simmer until thickened.

Assembly

  • In serving bowls, layer grains, sliced grilled chicken, and roasted broccoli. Drizzle with garlic sauce and garnish with herbs.

Notes

Serve these bowls warm for the best flavor. They can be paired with a side salad for added freshness. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving. You can add your favorite vegetables like bell peppers or carrots for variety.
