Ingredients
  

For the meatballs

  • 1 cup Breadcrumbs Gluten-free breadcrumbs work for a gluten-free version.
  • 1/2 cup Grated Parmesan Cheese Use nutritional yeast for dairy-free.
  • 1/4 cup Fresh Parsley, chopped Can swap with fresh dill.
  • 3 cloves Minced Garlic Integral ingredient; no substitutes.
  • 1 tsp Dried Oregano Italian seasoning is a good alternative.
  • 1 tsp Salt Use sea salt for a gourmet touch.
  • 1/2 tsp Black Pepper Season to taste.
  • 1 large Egg Binds meatballs; can substitute with chia or flax eggs for vegan.
  • 2 tbsp Olive Oil Canola oil is acceptable if preferred.

For the rice

  • 1 cup Long-Grain Rice Brown rice is a hearty substitute.
  • 2 cups Chicken Broth Vegetable broth serves vegetarian preferences.
  • 1 tbsp Lemon Zest Fresh citrus is essential.
  • 2 tbsp Lemon Juice Bottled juice can be used in a pinch.
  • 2 tbsp Fresh Dill, chopped Can substitute with fresh mint.

Instructions
 

Meatball Preparation

  • In a large bowl, mix the ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, black pepper, and the egg. Combine everything until well mixed but do not overwork the meat.

Cooking Meatballs

  • Shape the mixture into small meatballs. Heat olive oil in a large skillet over medium heat.
  • Add the meatballs and cook for about 6-8 minutes on each side until browned and cooked through.

Rice Preparation

  • While the meatballs are cooking, rinse the long-grain rice under cold water. This removes excess starch and helps the rice stay fluffy.

Cooking Rice

  • In a medium saucepan, combine the rinsed rice and chicken broth. Bring the mixture to a boil over high heat.

Finalizing Rice

  • Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes until all the liquid is absorbed. Once cooked, fluff the rice with a fork and stir in the lemon zest, lemon juice, and fresh dill.

Serving

  • Place a generous serving of lemon herb rice on each plate and top with the Greek turkey meatballs. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze the meatballs separately from the rice. When ready to eat, reheat in the microwave or on the stove.
