Ingredients
  

Pasta & Vegetables

  • 8 ounces pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Instructions
 

Preparation

  • Cook the pasta according to package instructions, then drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • Chill in the refrigerator for 30 minutes before serving for the best flavor.

Notes

To store Greek Salad Pasta, place it in an airtight container in the refrigerator. It will stay fresh for up to 3 days. If you notice the pasta absorbs the dressing, you can add a little more olive oil and vinegar before serving to refresh it.
