Main Ingredients

  • 2 cups cooked pasta Any pasta works, but small shapes like rotini or penne hold the dressing well.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled Can substitute with mozzarella or goat cheese if desired.
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano Adjust according to taste.
  • Salt and pepper to taste Adjust the seasoning to suit your taste.

Preparation

  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, feta cheese, kalamata olives, and red onion.
  • In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

Greek Pasta Salad is best served cold or at room temperature. You can serve it as a side dish with grilled meats or fish, or enjoy it as a light lunch on its own. Garnish with extra feta or olives for added flavor and presentation. For leftovers, store in an airtight container in the refrigerator for about 3 days.
