Greek Meatball Bowl

Ingredients
  

For the Meatballs

  • 1 lb ground beef or lamb
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup breadcrumbs

For Serving

  • 2 cups cooked basmati or jasmine rice Use pre-cooked rice to save time.
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce Can substitute with plain yogurt mixed with garlic and cucumber.
  • 1 tablespoon olive oil
  • to taste Lemon wedges for serving Squeeze for extra flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the ground meat, red onion, garlic, parsley, oregano, cumin, salt, pepper, egg, and breadcrumbs until well combined.
  • Form the mixture into 1-inch meatballs and place them on the baking sheet.

Cooking

  • Bake for 18 to 20 minutes until the meatballs are fully cooked and browned.

Serving

  • Divide the cooked rice between 4 bowls.
  • Top with meatballs, cherry tomatoes, cucumber, red onion, and feta.
  • Drizzle with tzatziki sauce and olive oil. Serve with lemon wedges.

Notes

To store leftovers, place the bowls in airtight containers. Keep the meatballs and veggies separate from the rice to maintain freshness. Refrigerate for up to 3 days. Reheat the meatballs and rice in the microwave before serving. Adjust spices to your preference.
