Main ingredients

  • 2 pounds baby potatoes Choose small, evenly-sized for even cooking.
  • 1/4 cup olive oil
  • 1 cup chicken or vegetable broth Use vegetable broth to make it vegan.
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano Can also add thyme or rosemary.
  • to taste Salt and pepper
  • Fresh parsley for garnish (optional) Toss in for added color before serving.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large mixing bowl, combine the olive oil, broth, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add the baby potatoes to the bowl and toss to coat them evenly in the mixture.
  • Transfer the potatoes and all the liquid to a baking dish.

Cooking

  • Roast in the preheated oven for about 45-50 minutes, or until the potatoes are tender and golden, stirring halfway through.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, let the potatoes marinate in the herb mixture for 30 minutes before roasting. If you like a crispier texture, increase the oven temperature to 425°F (220°C) during the last 10 minutes of roasting.
