Ingredients

  • 2 cups cooked quinoa or brown rice Prepare according to package instructions.

Chicken

  • 1 lb chicken breast, grilled and sliced Season well before grilling.

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper, diced Use any color.
  • 1 medium red onion, thinly sliced
  • 2 cups mixed greens Any greens can be used.

Cheese and Herbs

  • 1 cup feta cheese, crumbled Can substitute with goat cheese.
  • 1/4 cup fresh parsley, chopped

Seasoning and Dressing

  • to taste Salt and pepper
  • Olive oil for drizzling

Instructions
 

Preparation

  • Prepare quinoa or brown rice according to package instructions.
  • Grill chicken breasts until cooked through, then slice.

Assembly

  • In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and mixed greens.
  • Add the grilled chicken, cooked quinoa or rice, and feta cheese to the bowl.
  • Drizzle with olive oil, season with salt and pepper, and toss gently.

Serving

  • Serve in bowls and top with homemade tzatziki sauce.
