Salad Ingredients

  • 1 bunch radishes, sliced 1/8 inch Choose fresh, firm, and crisp radishes for the best flavor.
  • 1 tbsp olive oil
  • 1/4 cup fresh grated Parmesan Plus extra for topping.
  • 2 tbsp fresh dill, torn
  • 1 lemon (juice and zest)
  • Salt & black pepper to taste Adjust seasoning according to taste.

Preparation

  • Slice the radishes thin and even. Add them to a bowl.
  • Squeeze juice from half the lemon over the radishes. Add a big pinch of salt and massage for 1-2 minutes.
  • Add olive oil, Parmesan, and dill to the bowl. Toss gently to combine.

Serving

  • Plate the radishes. Top with lemon zest, extra Parmesan, more dill, and black pepper.
  • Serve immediately.

Notes

This salad is best served fresh and can be enjoyed on its own or as a side dish. Pair with grilled meats or fish for a complete meal.
