Lamb Chops

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Mashed Potatoes

  • 2 large potatoes peeled and chopped
  • 1/4 cup milk
  • 2 tablespoons butter
  • Garlic powder (optional)
  • Chives for garnish (optional)

Preparation

  • Preheat the grill or a skillet over medium-high heat.
  • In a small bowl, mix olive oil, honey, balsamic vinegar, salt, and pepper.
  • Brush this glaze over the lamb chops.
  • Cook the lamb chops for 4-5 minutes on each side, or until you reach your desired doneness.
  • While the lamb is cooking, peel and chop the potatoes.
  • Boil the potatoes in salted water until they are tender, about 15-20 minutes.
  • Drain the potatoes, then mash them with milk, butter, garlic powder (if using), salt, and pepper until creamy.

Serving

  • Serve the glazed lamb chops on a bed of mashed potatoes, garnished with chives if desired.
  • You can drizzle any remaining glaze over the lamb for extra flavor.
  • Pair it with a fresh salad or steamed vegetables for a complete meal.

Notes

Make sure the lamb chops are at room temperature before grilling or cooking to ensure even cooking. For extra flavor in the mashed potatoes, add roasted garlic or substitute sour cream for some of the milk.
