  • 1 piece lemon, juiced
  • 2 pieces carrots, sliced

Cooking Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and sauté until it becomes translucent.
  • Stir in the minced garlic and grated ginger, cooking for about 1 minute until they are fragrant.
  • Pour in the chicken broth and bring it to a boil.
  • Add the sliced carrots and celery, then reduce heat and let it simmer for 10 minutes.
  • Stir in the shredded chicken and lemon juice, seasoning with salt and pepper to taste.
  • Simmer for another 5 minutes before serving.
  • Garnish with fresh parsley before enjoying.

This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Consider adding spices like turmeric or cumin for varied flavor. For a creamier texture, whisk in coconut milk or cream just before serving.
