  • 1 head cabbage, chopped You can use green, red, or Napa cabbage.
  • 4 cloves garlic, minced Add more for a stronger garlic flavor.
  • 1 medium onion, chopped Adds sweetness to the soup.
  • 4 cups vegetable broth Ensure it's gluten-free if needed.
  • 2 tablespoons olive oil For sautéing.
  • 1 teaspoon dried thyme Can substitute with fresh thyme.
  • 1 teaspoon dried oregano Can substitute with fresh oregano.
  • to taste Salt and pepper Adjust according to preference.
  • Fresh herbs for garnish Such as parsley or cilantro.

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Stir in the chopped cabbage and sauté for another 5 minutes.
  • Add the vegetable broth, thyme, oregano, salt, and pepper.
  • Bring to a boil, then reduce to a simmer and cook for 20-30 minutes, until the cabbage is tender.
  • Taste and adjust seasoning as needed.
  • Serve warm, garnished with fresh herbs if desired.

Notes

To store, cool completely and transfer to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 3 months. Reheat before serving. Optional: add smoked paprika, carrots, or potatoes for variation.
