  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the orzo pasta to the skillet and toast for 2-3 minutes, stirring frequently.
  • Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10-12 minutes or until the orzo is tender and the liquid is absorbed.
  • Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  • Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove, adding a little broth or water if it seems dry. You can customize with extra vegetables or protein.
