Ingredients

  • 1 chicken breast, sliced horizontally
  • 8 oz spaghetti
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, freshly grated
  • 6 cloves garlic, minced
  • 1.5 tbsp soy sauce
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika

Instructions

  • Combine salt, pepper, garlic powder, onion powder, and smoked paprika in a small bowl.
  • Rub the chicken breast with olive oil and the seasoning mixture.
  • Sear the chicken in a hot skillet for 2-3 minutes per side until golden brown and cooked through, then remove and let rest.
  • Boil the spaghetti according to package directions, reserving some pasta water before draining.
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Whisk in the heavy cream, parmesan, soy sauce, and a splash of the reserved pasta water.
  • Simmer the sauce for 2-3 minutes until it thickens slightly.
  • Toss the cooked pasta into the sauce until well coated.
  • Slice the rested chicken and serve it on top of the pasta.

Notes

Ensure you grate the parmesan from a block for the best melting texture. The soy sauce is a secret ingredient that provides deep umami without the need for alcohol. If the sauce becomes too thick, add an extra tablespoon of reserved pasta water to reach your desired consistency.
