Main Ingredients

  • 1.5 pounds ground chicken Leaner than traditional beef meatloaf.
  • 0.5 cup grated Parmesan cheese For flavor.
  • 3 cloves garlic (minced) Use fresh for better flavor.
  • 0.5 cup breadcrumbs (plain or Italian-seasoned) For binding.
  • 1 large egg (lightly beaten) Acts as a binder.
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded mozzarella cheese (optional) For a cheesy center.
  • 2 tablespoons chopped parsley For garnish.

For the Topping

  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 teaspoon minced garlic

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  • In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined but be careful not to overmix.
  • Transfer half of the chicken mixture to the prepared loaf pan and press it evenly into the bottom. If you’re using mozzarella for a cheesy center, layer it over the meat mixture, leaving a small border around the edges. Add the remaining chicken mixture on top and press gently to seal.
  • In a small bowl, mix the grated Parmesan, melted butter, and minced garlic. Spread this mixture evenly over the top of the meatloaf.

Baking

  • Place the meatloaf in the preheated oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing.

Serving

  • Garnish with chopped parsley for a fresh touch. Serve your meatloaf with a side of mashed potatoes or a fresh salad.

Notes

Use fresh garlic for better flavor. Don’t skip the resting time after baking to help with slicing. If you want more flavor, add some diced onions or bell peppers to the mix. Adjust the seasonings to your taste.
