  • 8 oz Mushrooms (cremini or button), sliced
  • 4 cloves Garlic, minced Adjust to taste

  • 1 cup Vegetable Broth Chicken broth can also be used
  • 1 tablespoon Butter Use plant-based butter for a vegan option
  • Salt, pepper, and fresh herbs (thyme or parsley) to taste
  • Red Pepper Flakes (optional) For a spicy kick

Preparation

  • Start by washing and cutting your cauliflower into bite-sized florets. Slice the mushrooms and mince the garlic.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, making sure not to let it burn.
  • Add the sliced mushrooms to the skillet, stirring occasionally. Sauté for about 5 to 7 minutes or until the mushrooms are golden brown and have released their moisture.
  • Now, toss in the cauliflower florets and stir well to coat in the garlicky goodness. Add in your vegetable broth to create a flavorful steam bath and cover the skillet.
  • Allow the dish to simmer for about 10 minutes until the cauliflower is tender but still has a bit of crunch. Season with salt, pepper, and red pepper flakes if desired.
  • Once cooked, turn off the heat and stir in the butter for a silky finish. Optionally, add a squeeze of lemon juice or some fresh herbs for a pop of color.

Serving

  • Gently toss everything in the skillet to combine. Serve hot as a standalone dish or alongside your protein of choice.

Notes

You can add other vegetables like bell peppers or spinach for more nutrition. Adjust garlic and spice levels based on your taste preference. For a creamy version, stir in a splash of cream or sour cream before serving.
