Ingredients
  

For the Broth

  • 2 pounds boneless, skinless chicken thighs
  • 6 cloves garlic, thinly sliced
  • 3 inches fresh ginger, peeled and finely chopped
  • 6-8 ounces scallions, thinly sliced — whites and greens separated
  • 4 teaspoons kosher salt
  • ½ teaspoon freshly ground white or black pepper
  • 10 cups water

For the Flavor Seasoning

  • ¼ cup rice vinegar (black or regular)
  • ¼ cup soy sauce (low-sodium if preferred)
  • 2 tablespoons toasted sesame oil
  • to taste Crispy chili oil

For the Add-Ins

  • 8 ounces dried ramen-style noodles (or any thin wheat noodles)
  • 1 cup carrots, cut into thin matchsticks (about ½ large carrot)
  • 6-8 ounces mushrooms (shiitake, oyster, or cremini), thinly sliced

For Serving

  • to taste Sliced scallion greens (reserved from above)
  • to taste Extra chili oil or sesame oil for drizzling

Instructions
 

Preparation

  • In a large pot, combine the chicken thighs, sliced garlic, chopped ginger, scallion whites, kosher salt, pepper, and water. Bring to a boil over medium heat.
  • Once boiling, reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
  • Remove the chicken from the pot and let it cool slightly. Shred the chicken into bite-sized pieces.
  • Return the shredded chicken to the pot. Add rice vinegar, soy sauce, and sesame oil. Stir to combine.
  • Add the noodles, carrots, and mushrooms to the soup. Cook for another 5-7 minutes or until the noodles are tender.
  • Taste and adjust seasoning as needed. Add crispy chili oil to taste for extra spice.
  • Serve hot, garnishing with sliced scallion greens and a drizzle of chili oil or sesame oil.

Notes

Feel free to adjust the level of garlic and ginger according to your taste preference. If you like your soup spicier, add more chili oil when serving. To save time, you can use rotisserie chicken instead of cooking chicken thighs from scratch. For a vegetarian version, replace chicken with tofu and use vegetable broth.
