  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small head cauliflower, cut into florets Cut into smaller florets for even cooking.
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste Adjust seasoning to preference.
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional) Omit for vegan variant.
  • Fresh parsley, for garnish

Instructions
 

Preparation

  • In a large skillet over medium heat, add olive oil and butter.
  • Add cauliflower and cook for 5-6 minutes until slightly golden.
  • Add mushrooms and continue cooking for 4-5 more minutes.
  • Stir in garlic, paprika, Italian seasoning, salt, and pepper. Cook for another 2 minutes until fragrant.
  • Drizzle with lemon juice, sprinkle with Parmesan (if using), and garnish with fresh parsley. Serve hot!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a skillet or microwave. Feel free to add other vegetables like bell peppers or spinach, or protein like chicken or tofu.
