Ingredients
  

For the skewers

  • 2 medium zucchinis, sliced Washed and sliced into thick rounds or half-moons
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter Melted
  • 2 tbsp extra virgin olive oil For coating zucchini
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice Drizzled before serving

Preparation

  • Wash and slice the zucchinis into thick rounds or half-moons for even cooking.
  • In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and simmer until fragrant.
  • In a large bowl, combine the zucchini slices with olive oil, salt, pepper, and garlic butter until well coated.
  • Thread the zucchini onto skewers (soak wooden skewers in water first).

Cooking

  • Preheat the grill to medium-high (about 400°F).
  • Grill the skewers for 8-10 minutes, turning occasionally, until they are tender with char marks.
  • Drizzle fresh lemon juice over the skewers before serving hot.

Notes

Garlic Butter Zucchini Skewers are best served hot off the grill. They pair well with grilled meats or can be served as a main dish with a light salad.
