  • 3 tablespoons olive oil
  • 2 tablespoons melted butter (or more olive oil, if preferred) Use olive oil for a vegan option.
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional, for heat)
  • ½ juice of lemon Freshly squeezed for best flavor.

Preparation

  • Preheat your oven to 425°F (220°C) to achieve a crispy exterior on the cauliflower.
  • Rinse the cauliflower florets and pat them dry with a clean towel or paper towels.

Mixing and Coating

  • In a large bowl, whisk together olive oil, melted butter, minced garlic, salt, black pepper, smoked paprika, and optional red pepper flakes until well combined and fragrant.
  • Add the florets to the bowl and toss to ensure each piece is evenly coated.

Roasting

  • Arrange the florets on a baking sheet in a single layer, leaving space between each floret.
  • Roast in the preheated oven for 20–25 minutes, flipping halfway through for even browning.
  • Remove from the oven once fork-tender and golden on the edges.

Finishing

  • Immediately drizzle or spritz juice from half a lemon over the cauliflower before serving.

Serving

  • Serve hot alongside your favorite main dish or as a standalone side.

Notes

To store leftovers, place in an airtight container in the fridge for up to three days. Reheat in the oven or microwave.
