For the Zucchini Skewers

  • 2 medium zucchini, sliced Choose firm, fresh zucchini.
  • 4 tablespoons unsalted butter Can substitute with plant-based butter for vegan option.
  • 3 cloves garlic, minced Adjust amount based on taste.
  • Salt and pepper to taste
  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes prior to grilling.
  • Fresh herbs (optional, for garnish) Can use thyme, oregano, or herbs of choice.

Preparation

  • Preheat the grill to medium-high heat.
  • In a small saucepan, melt the butter over low heat and add the minced garlic. Cook until fragrant, about 1-2 minutes.
  • Season the zucchini slices with salt and pepper, and thread them onto the skewers.
  • Brush the garlic butter over the zucchini skewers.

Grilling

  • Grill the skewers for about 3-4 minutes on each side or until tender and slightly charred.
  • Remove from the grill and drizzle with any remaining garlic butter. Garnish with fresh herbs if desired, and serve warm.

Notes

These skewers can be served as a side dish and pair well with grilled meats, fish, or enjoyed alone. For leftovers, store in an airtight container in the refrigerator for up to 2 days. Reheat on the grill or in the oven.
