  • 4 cups chopped green cabbage Do not overcook; keep crunchy for best texture.
  • 1 can diced tomatoes with green chilies (14.5 oz) Use hot version for added spice.
  • 2 cups Fritos corn chips Add just before serving for crunch.
  • 1 medium onion, diced
  • 2 tbsp taco seasoning Adjust spice level based on preference.
  • 1 cup shredded cheddar cheese Can substitute with other cheeses.
  • ½ cup sour cream (optional) For serving.

Preparation

  • Chop the cabbage, onion, and bell pepper.

Cooking

  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Add the diced onion and bell pepper; sauté until softened.
  • Stir in the diced tomatoes and taco seasoning; simmer for about 5 minutes.
  • Add the chopped cabbage; stir until coated and cook until slightly wilted but still crunchy.
  • Remove from heat, top with Fritos and shredded cheese, allowing it to melt.

Serving

  • Serve warm with a dollop of sour cream if desired.

Notes

For added flavor, consider toppings such as jalapeños, sliced olives, or fresh cilantro. Leftovers can be stored for about 3-4 days in an airtight container in the fridge.
