Ingredients
  

  • 2 medium ripe mangos, peeled and cut into bite-size chunks
  • 1 red bell pepper, seeded and diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded and chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon kosher salt

Instructions
 

  • Peel the mangos, remove the pit, and cut the flesh into bite-size chunks
  • Seed and dice the red bell pepper
  • Finely chop the red onion; soak in cold water briefly if desired to mellow sharpness, then drain
  • Seed and chop the jalapeño (leave seeds for extra spice if preferred)
  • Mince the garlic
  • In a large bowl, combine all ingredients, mixing until well blended
  • Cover and refrigerate for 15 minutes to allow flavors to meld, or up to 3 days for enhanced flavor

Notes

Use Ataulfo or Tommy Atkins mangos for optimal sweetness and texture
Soak red onion in cold water to soften pungency for a milder flavor
Adjust jalapeño seeds to control spice level
Pineapple juice can replace orange juice for a tropical twist
Chill for at least 15 minutes before serving to enhance flavor balance
