  • 2 cups butter beans, drained and rinsed
  • 2 large onions, sliced
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 cup grated Gruyère cheese (optional for topping)

Preparation

  • In a large skillet, melt the butter over medium heat.
  • Add the sliced onions and cook until they are caramelized, about 15-20 minutes, stirring occasionally to prevent burning.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the drained butter beans and thyme, stirring to combine.
  • Let it simmer for about 10 minutes to heat the beans through and allow the flavors to meld.
  • Season with salt and pepper to taste.
  • If desired, transfer to a baking dish, sprinkle Gruyère cheese on top, and broil until bubbly and golden.
  • Serve warm.

Notes

For deeper flavor, cook the onions longer until they are a rich brown color. Add a pinch of red pepper flakes while cooking for a kick. Substitute butter beans with cannellini or navy beans if preferred. Can also add sautéed mushrooms or spinach for added nutrition and flavor.
