Pancake Mixture

  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder Make sure it's fresh for the best rise.
  • 0.5 teaspoon salt
  • 1 tablespoon sugar
  • 1.25 cups milk Almond milk or soy milk can be used as a substitute.
  • 1 large egg For fluffier pancakes, consider separating the egg and whipping the whites.
  • 3 tablespoons melted butter
  • 2 teaspoons vanilla extract Optional, for added flavor.

Preparation

  • In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.
  • Make a well in the center and add the milk, egg, melted butter, and vanilla extract (if using).
  • Mix gently until just combined. Remember, lumps are okay!

Cooking

  • Heat a non-stick griddle over medium-high heat and lightly grease it.
  • Pour ¼ cup of batter for each pancake onto the griddle.
  • Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another minute until golden brown.

Serving

  • Serve warm with your favorite toppings such as maple syrup, fresh fruits, whipped cream, or nuts.

Notes

Don't overmix the batter; mixing just until combined helps keep the pancakes fluffy. You can add chocolate chips, blueberries, or banana slices for variations. Keep pancakes warm in the oven at a low temperature while finishing cooking the rest.
