Ingredients
  

  • 3 cups gluten-free all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon rapid-rise yeast
  • 1 1/2 cups room temperature water (70-75°F)
  • 1/4 cup chopped sun-dried tomatoes (softer by hot water)
  • 1/4 cup grated parmesan cheese (vegetarian)
  • 1/4 cup grated asiago cheese
  • 1 teaspoon minced garlic
  • 1 tablespoon extra virginia olive oil (for brushing)

Instructions
 

  • Combine flour, salt, and yeast in a bowl. Add water, sun-dried tomatoes, cheeses, and garlic. Mix gently until a soft dough forms.
  • Cover and let rise at room temperature (18 hours, overnight).
  • Gently fold dough to deflate. Shape into a loaf and place in a parchment-lined Dutch oven.
  • Use fingers to create irregular crumb pockets in the dough before baking.
  • Preheat oven to 450°F (230°C) with Dutch oven inside for 30 minutes.
  • Bake for 15 minutes with lid on. Remove lid, reduce heat to 375°F (190°C), and bake 30 more minutes until golden and hollow inside.
  • Cool in Dutch oven for 10 minutes, then transfer to a wire rack until fully cooled.

Notes

Verify gluten-free flour contains xanthan gum or irregular gluten-free all-purpose blend.
Cheeses can be doubled for a more intense flavor profile.
Preheating the Dutch oven cold ensures even heat distribution and optimal oven spring.
