  • 1 cup full-fat cottage cheese Use full-fat for the best texture.
  • 4 large eggs Separate yolks and whites.
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Preparation

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the cottage cheese, egg yolks, baking powder, and salt until smooth.

Baking

  • In another bowl, whip the egg whites until stiff peaks form.
  • Gently fold the egg whites into the cottage cheese mixture. Be careful not to deflate the egg whites.
  • Scoop the mixture onto the prepared baking sheet in the shape of rounds.
  • Bake for 25-30 minutes or until golden brown and set.

Notes

Store any leftover cloud bread in an airtight container in the refrigerator for up to three days. You can freeze it for longer storage, separating each piece with parchment paper.
