  • 1 cup full-fat cottage cheese Use full-fat for the best texture.
  • 4 large eggs Separate yolks and whites.
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Preparation

  • Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, blend the cottage cheese, egg yolks, baking powder, and salt until smooth.
  • In another bowl, beat the egg whites until stiff peaks form.
  • Gently fold the whipped egg whites into the cottage cheese mixture until just combined.
  • Spoon dollops of the mixture onto the prepared baking sheet and shape as desired.

Baking

  • Bake for 25-30 minutes or until golden brown on top.
  • Allow cooling slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Freeze individual pieces for up to a month, wrapped in plastic and placed in a freezer bag. Thaw in the fridge or warm in the oven before serving. Ensure egg whites are beaten to stiff peaks for fluffiness and do not overmix when folding to keep the mixture light.
