  • 1 cup cottage cheese High in protein
  • 4 large eggs
  • 1/2 cup almond flour Low carb alternative
  • 1 teaspoon baking powder For leavening
  • 1/2 teaspoon vanilla extract For flavor
  • to taste none Salt Adjust to personal preference
  • as needed none Butter or oil For cooking

Preparation

  • In a blender, combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt. Blend until smooth.

Cooking

  • Heat a non-stick pan over medium heat and add a little butter or oil.
  • Pour 1/4 cup of the batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

Serving

  • Serve warm with your choice of toppings such as fresh fruit, maple syrup, yogurt, or a sprinkle of cinnamon.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for longer storage. Use parchment paper to separate pancakes when freezing.
