Ingredients
  

Stir Fry

  • 1 lb smoked or chicken sausage, sliced into rounds Choose your preferred type of sausage.
  • 1 medium head green cabbage, cored & thinly sliced (about 6 cups) Fresh cabbage recommended for better crunch.
  • 1 medium onion, thinly sliced
  • 2 medium carrots, julienned
  • 3 cloves garlic, minced For added flavor.
  • 2 tablespoons olive oil (or avocado oil), divided Adjust the oil based on preference.
  • 2 tablespoons soy sauce (or coconut aminos, gluten-free) Use gluten-free options if needed.
  • 1 teaspoon smoked paprika Adds a nice smoky flavor.
  • Salt & black pepper, to taste Adjust to your seasoning preference.
  • 2 green onions thinly sliced (garnish)

Optional Finishes

  • 1 teaspoon toasted sesame oil For added flavor, optional.
  • Red pepper flakes, to taste Optional for spiciness.
  • Sesame seeds, for garnish Optional for presentation.

Instructions
 

Preparation

  • Slice the sausage, cabbage, onion, and carrots; mince the garlic and gather the seasonings.

Cooking

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sausage and cook until browned on both sides. Transfer the sausage to a plate.
  • Add the remaining oil to the skillet. Sauté the onion, carrots, and garlic until they are just tender.
  • Add the cabbage, soy sauce, smoked paprika, a pinch of salt, and pepper. Stir-fry until the cabbage is tender but still slightly crisp.
  • Return the sausage to the skillet and toss to coat everything evenly. Off the heat, drizzle with sesame oil if using. Taste and adjust the seasoning as needed.
  • Garnish with green onions and sesame seeds, if desired. Enjoy it as-is or serve it over rice or noodles.

This dish can be served as a standalone meal or over rice or noodles. It makes a great lunch option, and pairs well with a side salad or crusty bread. For more flavor, try using different types of sausage, adding more red pepper flakes for spice, or incorporating other vegetables like bell peppers or broccoli.
