  • 1 Onion Yellow or white onions work interchangeably.
  • 1 Green bell pepper Any sweet pepper variety can substitute.
  • 1 Red bell pepper Enhances sweetness and adds color.
  • 3 cloves Garlic Fresh is preferred; garlic powder can substitute.
  • 14.5 ounces Diced tomatoes Can be canned or fresh.
  • 8 ounces Tomato sauce Opt for low-sodium versions if desired.
  • 1 can Kidney beans Can substitute with black beans or chickpeas.
  • 1 can Pinto beans Can swap with any legume.

Spices and Seasonings

  • 1 tablespoon Chili powder Adjust to taste.

Instructions
 

Preparation

  • Start by slicing the smoked sausage into bite-sized pieces.
  • In a large pot or Dutch oven, heat a little oil over medium heat. Add the sausage and cook until browned.
  • Remove the sausage and set it aside. In the same pot, add chopped onion, green bell pepper, and red bell pepper. Sauté until they are softened.
  • Add minced garlic and cook for another minute, stirring frequently.

Cooking

  • Stir in the rice, diced tomatoes, tomato sauce, chicken broth, kidney beans, pinto beans, chili powder, smoked paprika, cayenne pepper, oregano, salt, and black pepper.
  • Bring the mixture to a boil, then lower the heat, cover the pot, and let it simmer for about 20 minutes or until the rice is cooked.
  • Once cooked, add back the sausage and mix well. Taste and adjust the seasoning if needed.

Serving

  • Serve hot with chopped green onions and hot sauce on the side.

Notes

For added flavor, consider marinating the sausage in spices before cooking. If you like extra veggies, feel free to add corn, zucchini, or even spinach. Adjust the spices according to your heat preference. Serve with a dollop of sour cream or shredded cheese for extra creaminess.
