Ingredients
  

  • 2 flatbreads
  • ¼ cup tomato sauce
  • 4 oz fresh mozzarella cheese, sliced
  • 1 cup yellow and red cherry tomatoes, halved
  • 3 tbsp olive oil, divided
  • ¼ tsp salt
  • ¼ tsp freshly cracked pepper
  • 1 tbsp grated Parmesan
  • 1 tbsp fresh basil, sliced

Instructions
 

  • Preheat oven to 425°F (220°C)
  • Place flatbreads on a parchment-lined baking sheet
  • Brush 1 tbsp olive oil evenly over each flatbread
  • Spread 1 tbsp tomato sauce over each flatbread
  • Top with mozzarella slices, halved cherry tomatoes, salt, and pepper
  • Bake for 10-12 minutes until crust is crisp and cheese is melted
  • Drizzle remaining 2 tbsp olive oil and sprinkle Parmesan and basil before serving

Notes

Use low-moisture mozzarella for less weeping
Whole wheat flatbreads add nutty flavor
Store leftovers in an airtight container for up to 3 days
