  • 1 lb chicken breast, diced
  • 4 cups chicken broth Use gluten-free if necessary.
  • 2 cups mixed vegetables (carrots, celery, bell peppers) You can use fresh or frozen.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • to taste salt and pepper
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and minced garlic, and sauté until soft.
  • Add diced chicken breast and cook until no longer pink.

Cooking

  • Pour in chicken broth and bring to a boil.
  • Stir in mixed vegetables, thyme, rosemary, salt, and pepper.
  • Reduce heat and let simmer for about 20 minutes until vegetables are tender.
  • Serve hot and enjoy!

Notes

This soup can be served as a light meal or a starter. Pair it with whole-grain bread or a fresh salad. For extra flavor, add fresh herbs or a squeeze of lemon. To store, let cool and transfer to an airtight container; it lasts up to 4 days in the refrigerator or 3 months in the freezer.
