  • 4 oz Ramen noodles Use any preferred noodle type.
  • 4 cups Broth (chicken or vegetable) For vegetarian, use vegetable broth.
  • 3 tbsp Sweet chili sauce Adjust sweetness to preference.
  • 2 tbsp Soy sauce Use low-sodium if desired.
  • 2 tbsp Fresh lime juice Squeezed fresh for best flavor.
  • 3 cloves Garlic (minced) Freshly minced for maximum flavor.
  • 1 tbsp Ginger (minced) Fresh is recommended.
  • 2 stalks Scallions (sliced) For garnish and flavor.
  • 1 bunch Coriander (fresh, for garnish) Use for topping.
  • 2 cups Vegetables (e.g., bell peppers, carrots, and mushrooms) Other vegetables like spinach can be added.

Instructions
 

Preparation

  • In a pot, heat the broth and bring it to a simmer.
  • Add minced garlic and ginger, cooking until fragrant.

Cooking

  • Stir in sweet chili sauce and soy sauce.
  • Cook ramen noodles according to package instructions; drain and set aside.
  • Add sliced vegetables to the broth and cook until tender.
  • Mix cooked noodles into the broth.
  • Serve in bowls with fresh lime juice squeezed on top and garnish with scallions and coriander.

Notes

Store leftovers in an airtight container in the refrigerator. Best eaten within two to three days. Store noodles separately to prevent them from getting too soft. Customize with toppings like chili flakes or fresh herbs.
