Ingredients
  

  • 3 ripe peaches, sliced
  • 4 cups seedless watermelon, cubed
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon extra-virgin olive oil
  • Pinch sea salt
  • Cracked black pepper, to taste

Instructions
 

  • Slice peaches into wedges or bite-sized pieces
  • Cube watermelon and remove seeds if needed
  • Chop fresh mint leaves
  • In a large bowl, combine peaches, watermelon, and mint
  • Drizzle with lime juice, olive oil, sea salt, and cracked pepper
  • Toss gently to coat
  • Chill for 15 minutes or serve immediately

Notes

Use freestone peaches for easier slicing
Drain excess watermelon juice if needed
Substitute cantaloupe or honeydew for variety
Lemon juice offers milder acidity than lime
Chilling enhances texture but is optional
Store in an airtight container for up to 2 hours
