  • 1 pound sausage (your choice, like pork or turkey) Choose high-quality sausage for best flavor.
  • 1 small head cabbage, chopped Substitute with greens like kale or spinach if desired.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 teaspoon paprika or red pepper flakes (optional) Add for extra kick.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the sausage. Cook until browned, breaking it apart with a spatula.
  • Add chopped onion and minced garlic. Stir and cook until the onion is soft.
  • Add chopped cabbage to the skillet. Stir well to combine.
  • Season with salt, pepper, and optional spices.
  • Cover and cook for about 10-15 minutes, stirring occasionally until the cabbage is tender.
  • Taste and adjust seasoning if needed. Serve warm.

Notes

Serve hot from the skillet. Great on its own or with crusty bread and a sprinkle of fresh parsley. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month.
