Ingredients
  

Chicken and Toppings

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup fresh basil pesto Use fresh for best flavor.
  • 1 cup cherry tomatoes, halved
  • 1 cup burrata cheese Can substitute with mozzarella or feta.
  • 1/2 cup roasted red peppers, chopped Can use grilled vegetables as an alternative.
  • Salt and pepper to taste
  • Olive oil for grilling
  • Balsamic glaze for drizzling (optional) Ensure it is gluten-free if needed.

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Brush the grill with olive oil and place the chicken breasts on it.

Cooking

  • Cook for about 6-7 minutes on each side, or until the chicken is fully cooked and the juices run clear.
  • In a bowl, combine the halved cherry tomatoes and chopped roasted red peppers.

Assembly

  • Once the chicken is cooked, remove it from the grill.
  • Top each breast with basil pesto and a generous portion of burrata cheese.
  • Spoon the tomato and roasted red pepper mixture on top of the chicken.
  • Drizzle with balsamic glaze if desired.
  • Serve warm and enjoy your delicious meal!

Notes

Best served warm. Pair with a side salad or crusty bread. Add extra fresh basil leaves for a pop of color and flavor.
