Ingredients

  • 2 lbs Beef Chuck Roast
  • 1 Chopped Onion
  • 4 cloves Minced Garlic
  • 2 Dried Guajillo Peppers
  • 2 Dried Ancho Peppers
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 2 leaves Bay Leaves
  • 4 cups Beef Broth
  • to taste Salt
  • to taste Pepper

For serving

  • Tortillas
  • Chopped cilantro
  • Chopped onions

Instructions
 

Preparation

  • In a dry pan, toss the dried guajillo and ancho peppers over medium heat until they’re fragrant.
  • Remove them from the heat and soak them in hot water for about 15 minutes.

Cooking

  • Layer in the beef chuck roast, chopped onion, minced garlic, cumin, oregano, bay leaves, and the soaked peppers (with some soaking liquid) in a crockpot.
  • Pour the beef broth over the mixture and sprinkle with salt and pepper to taste.
  • Cover the crockpot and set it to low heat. Cook for about 8 hours until the beef is tender and shreddable.
  • Once cooked, shred the beef in the pot with a fork and mix it with the broth.

Serving

  • Serve the birria in bowls with broth or use the shredded beef to fill tortillas. Top with fresh cilantro and onions.

Notes

For a spicier kick, add a fresh jalapeño or additional dried peppers to the mix. Make sure to let the beef cook long enough for it to become tender. If you can shred it easily with a fork, it’s ready. Pair your birria with a side of rice and beans for a complete meal.
