Ingredients
  

  • Dry pasta of choice (8 oz)
  • Olive oil (1 Tablespoon)
  • Onion, finely chopped (1/2 cup)
  • Garlic, minced (3-4 cloves)
  • Butter (1 Tablespoon)
  • Chicken breasts, cut into bite-size pieces (1 pound)
  • Italian seasoning (1 teaspoon)
  • Smoked paprika (1/2 teaspoon)
  • Garlic powder (1/2 teaspoon)
  • Salt (to taste)
  • Black pepper (to taste)
  • Heavy cream (1 cup)
  • Grated parmesan cheese (1/2 cup)
  • Sun-dried tomatoes (1 cup, drained and chopped)

Instructions
 

  • 1. Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water.
  • 2. Sauté onion in olive oil in a large skillet until soft.
  • 3. Add garlic, butter, Italian seasoning, paprika, salt, and pepper.
  • 4. Brown chicken in the skillet, then cook until no longer pink.
  • 5. Deglaze with a splash of pasta water, then stir in heavy cream.
  • 6. Add parmesan and sun-dried tomatoes; stir until thickened.
  • 7. Toss cooked pasta into the skillet with sauce, using reserved water to create a silky emulsion.
  • 8. Serve hot with additional parmesan and parsley if desired.

Notes

Use half-and-half or evaporated milk instead of heavy cream for lighter texture.
Freeze and thaw sun-dried tomatoes before use.
Substitute milk for a dairy-free option with vegan parmesan.
Marinate chicken 30 minutes ahead for extra flavor.
For gluten-free version, use gluten-free pasta.
