Ingredients
  

  • 3 tbsp unsalted butter
  • 1 medium onion, thinly sliced
  • 2 tsp fresh thyme, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 12 count sweet rolls
  • 10 slices provolone cheese
  • 14 ounces deli roast beef
  • 1/2 cup melted butter
  • 1.5 tbsp onion soup mix
  • 1 packet au jus mix
  • 3 cups water

Instructions
 

  • Preheat oven to 350°F.
  • Melt 3 tbsp butter in a skillet over medium heat and cook onions until soft and browned, about 12-15 minutes.
  • Stir in thyme, salt, and pepper into the onions and remove from heat.
  • Slice the rolls horizontally and place the bottom halves in a baking dish.
  • Layer the roast beef, caramelized onions, and provolone cheese over the bottom rolls.
  • Place the top halves of the rolls over the cheese.
  • Mix the melted butter with the onion soup mix and brush over the tops of the rolls.
  • Bake for 10-15 minutes until the cheese is melted and rolls are golden.
  • Prepare the au jus according to packet directions and serve as a dipping sauce.

Notes

Swiss cheese is a great substitute for provolone if preferred. Ensure you use high-quality deli roast beef for the best flavor. Store leftovers in an airtight container for up to 3 days in the refrigerator.
