  • 1.5 lbs chicken breast
  • 1 medium bell pepper, sliced
  • 1 medium onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 2 tablespoons fajita seasoning
  • to taste Salt and pepper
  • Tortillas for serving

Instructions
 

Preparation

  • Place the chicken breast, sliced bell pepper, and onion in the slow cooker.
  • Add the black beans, diced tomatoes, fajita seasoning, salt, and pepper.
  • Stir everything to combine.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken with two forks and stir to combine with the vegetables.

Serving

  • Serve in tortillas with optional toppings.

Notes

To store leftover fajitas, let them cool completely. Transfer the chicken and vegetables into an airtight container and place it in the fridge for up to three days. They can also be frozen for up to three months.
