Ingredients
  

  • Hoisin sauce, 3 Tbsp.
  • Low-sodium soy sauce, 2 Tbsp.
  • Apple cider vinegar, 2 Tbsp.
  • Sriracha (optional), 1 Tbsp.
  • Sesame oil, 1 tsp.
  • Extra-virgin olive oil, 1 Tbsp.
  • Onion (medium), 1
  • Garlic (minced), 2 cloves
  • Freshly grated ginger, 1 Tbsp.
  • Ground chicken, 1 lb.
  • Canned water chestnuts (drained), 1 cup

Instructions
 

  • Heat olive oil in a large skillet over medium heat
  • Add diced onion, sauté 3-4 minutes until softened
  • Stir in garlic and ginger, cook 1 minute
  • Add ground chicken and cook until browned (8-10 minutes)
  • Pour in hoisin sauce, soy sauce, apple cider vinegar, and sriracha (if using), stir to combine
  • Add water chestnuts and sesame oil, simmer 2-3 minutes to thicken
  • Serve mixture in lettuce cups garnished with sesame seeds if desired

Notes

Substitute tamari for soy sauce if gluten-free
Apple cider vinegar replaces rice wine vinegar as non-alcoholic alternative
Use gluten-free hoisin for gluten-free version
Water chestnuts can be omitted or replaced with finely chopped cabbage
