Ingredients
  

  • 2 cups shredded cooked chicken
  • 2 tablespoons chipotle adobo sauce
  • 1 tablespoon ketchup
  • 1 teaspoon honey
  • 1 teaspoon vinegar
  • 1 cup shredded cheddar cheese, divided
  • 1 mashed avocado
  • 1 teaspoon mayonnaise
  • 1 teaspoon olive oil
  • 2 slices sourdough bread

Instructions
 

  • Preheat a skillet over medium heat.
  • In a bowl, mix shredded chicken with adobo sauce, ketchup, honey, and vinegar.
  • Spread mayonnaise and olive oil on each sourdough slice.
  • Place half the cheese on each slice, then top with the chicken mixture.
  • Add 1/4 cup shredded cheese and avocados.
  • Heat the sandwiches in the skillet until golden and crisp (3-4 minutes per side).
  • Lettuce a moment to cool before serving.

Notes

Use rotisserie chicken or shredded turkey for a quick protein source
Adjust chipotle amount for heat
Cheddar melts best; swap Monterey Jack or mozzarella if preferred
