  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can enchilada sauce (15 oz)
  • 8 pieces flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can black beans (15 oz), rinsed and drained (optional)
  • 1 cup sour cream (for serving)
  • Chopped cilantro (optional, for garnish)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef and chopped onion until the meat is browned. Drain the excess fat.
  • Add half of the enchilada sauce to the skillet and stir to combine.

Assembly

  • Place about 1/4 cup of the beef mixture in each tortilla, adding black beans if desired, then roll the tortillas and place them seam-side down in a greased baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.

Cooking

  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Serving

  • Serve with sour cream and chopped cilantro if desired.

Notes

To store leftovers, let them cool completely and cover them tightly with foil or plastic wrap. Refrigerate for up to 3 days or freeze for up to 3 months. For extra flavor, consider adding spices like cumin or chili powder while the beef cooks. Optional: Use corn tortillas instead of flour for a different texture.
