Ingredients
  

  • Lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced
  • 1 whole avocado, sliced
  • 1 cup low-fat or full-fat cottage cheese
  • 1 medium yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or homemade blend)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat oven to 400°F (200°C)
  • Toss roasted sweet potatoes with 1 tbsp olive oil, paprika, and half the garlic powder. Roast on a baking sheet for 40 minutes.
  • Heat 1 tbsp olive oil in a skillet over medium-high heat. Add onion and cook until softened, about 3 minutes.
  • Add lean ground beef, breaking it up with a spoon. Cook until browned and fully cooked, about 3-5 minutes.
  • Stir in taco seasoning and remaining garlic powder, mixing well to coat the beef.
  • Divide roasted sweet potatoes among four bowls, top with seasoned beef, cottage cheese, and sliced avocado.
  • Finish with a drizzle of hot honey just before serving.

Notes

Ground turkey is a lean alternative to beef
Yukon gold potatoes work if you prefer quicker roasting
Use fresh garlic minced when cooking onions for brighter flavor
Swap Greek yogurt for cottage cheese if preferred
Ensure hot honey is alcohol-free (check store-bought labels or make your own with honey and non-alcoholic chili flakes)
