Ingredients
  

  • Boneless, skinless chicken breasts 4
  • Salt 1 tsp
  • Pepper 1/2 tsp
  • Homemade or pre-packaged pesto 4 Tbsp
  • Shredded mozzarella cheese 4 oz
  • Tomatoes 2 medium, sliced
  • Fresh basil For garnish

Instructions
 

  • Preheat oven to 400°F
  • Place chicken breasts on a baking sheet
  • Season with salt and pepper
  • Spoon 1 Tbsp pesto over each breast
  • Top each with 1 oz mozzarella and tomato slices
  • Bake 18-22 minutes until chicken reaches 165°F
