For the Tzatziki Sauce

  • 1 cup Greek yogurt Can be substituted with plant-based yogurt for a vegan option.
  • 1 cup cucumber, diced
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

For the Dish

  • 2 cups cooked rice Can use white or brown rice, ensure fully cooked.
  • 2 cups cooked chicken, shredded Using leftover rotisserie chicken works well.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the Greek yogurt, cucumber, garlic, dill, lemon juice, salt, and pepper to make the tzatziki sauce.

Cooking

  • In a baking dish, combine the cooked rice and shredded chicken.
  • Pour the tzatziki sauce over the rice and chicken, mixing well to combine.
  • Cover the baking dish with foil and bake for 20-25 minutes until heated through.

Serving

  • Serve warm and enjoy your healthy meal!

Notes

This dish is best served warm. You can add some extra fresh dill or lemon zest for garnish. Pair it with a simple side salad or steamed vegetables for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days.
