Preparation

  • Peel and cube the potatoes, thinly slice the onions, and mince the garlic.

Cooking

  • In a pan, heat vegetable oil and sauté the onions until golden brown.
  • Stir in garlic, turmeric, cumin, paprika, salt, and black pepper.
  • Add potatoes, tomatoes, dried lime powder, and water. Cover and simmer until potatoes are tender.

Serving

  • Garnish with fresh cilantro or parsley before serving.

Notes

For a richer taste, let the onions caramelize more before adding the garlic and spices. Adjust the spices according to your heat preference; you can add a pinch of chili powder for some heat. Use fresh herbs for garnish to enhance flavor and presentation.
