  • 1 cup ditalini pasta Any small pasta shape can be substituted.
  • 4 cups vegetable broth Homemade vegetable broth is preferred for richer flavor.
  • 1 cup diced tomatoes Canned or fresh diced tomatoes can be used.
  • 1 cup carrots, diced Fresh diced carrots enhance flavor.
  • 1 cup celery, diced Adds texture and flavor.
  • 1 medium onion, chopped Chop finely for even cooking.
  • 2 cloves garlic, minced Fresh garlic enhances aroma.
  • 1 teaspoon dried basil Use fresh basil for a more intense flavor if available.
  • 1 teaspoon dried oregano
  • to taste Salt and pepper Adjust according to preference.
  • for serving Parmesan cheese Grated Parmesan is recommended for serving.

Instructions
 

Cooking

  • In a large pot, heat a splash of olive oil over medium heat.
  • Add chopped onion and garlic, sautéing until translucent.
  • Stir in diced carrots and celery, cooking for a few minutes.
  • Add diced tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring to a boil.
  • Add ditalini pasta and cook according to package instructions until al dente.
  • Serve hot, garnished with Parmesan cheese.

Notes

For leftovers, cool to room temperature, store in an airtight container in the refrigerator for 3-4 days. Reheat on the stove or microwave. Suggestions include adding more vegetables or spices for extra flavor.
