Ingredients
  

Pasta Salad Base

  • 8 ounces rotini or elbow pasta
  • 1 cup dill pickles, chopped
  • 1/2 cup chopped red onion

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream For extra creaminess, consider adding more.
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Garnish

  • Fresh dill, for garnish (optional)

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Drain and rinse under cold water to cool down.
  • In a large bowl, combine the chopped pickles and red onion.
  • In another bowl, mix the mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper.
  • Add the cooled pasta to the bowl with the pickles and onions. Pour the dressing over the pasta mixture and stir until well combined.
  • Taste and adjust seasoning if needed.
  • Chill the salad in the refrigerator for at least 30 minutes before serving.

Serving

  • Serve Dill Pickle Pasta Salad in a large bowl or individual servings. It's great on its own or as a side dish with grilled meats, sandwiches, or burgers.
  • Add additional toppings, like crumbled cheese or chopped herbs, for extra flavor.

Notes

Store any leftover pasta salad in an airtight container in the refrigerator for up to 3 days. Before serving leftovers, give it a good stir to mix the flavors again.
